Dibon refers to the name of the family estate, Masía Dibon. It is mainly produced from vineyards located in the heart of Penedès, next to the estate and close to it. For this reason, the cava is named Dibon, as a tribute to our roots and family tradition, directly linked to the place where it was born and which has witnessed our history.
Macabeu 50%, Moscato 50%
The Penedès terroir is characterized by its diversity of soils and microclimates, ranging from limestone to clay soils, which favor the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, providing wines with great complexity and personality.
During the harvest, we carefully select and pick the grapes, one by one, to ensure maximum quality. Next, gentle pressing allows us to extract the must while preserving its essence. Fermentation occurs naturally, transforming the must’s own sugars into alcohol. Once completed, we clarify, stabilize, and filter the wine to remove impurities and tiny particles. Finally, we add carbon dioxide to create the characteristic bubbles of the traditional sparkling method. Then, through purely physical processes, we remove the alcohol while preserving the wine’s aromas and flavour. The result is an alcohol-free wine that retains all the essence and character of the original, ready for bottling.
Pale yellow in color with greenish hues, featuring lively and persistent bubbles that invite celebration.
Floral aromas such as magnolia, orange blossom, and acacia. Also notes of white spices, tropical fruits like banana, coconut, and exotic fruits, as well as stone fruits like apricot.
On the palate, all the aromas found on the nose reappear, with a festive and light freshness. A subtle acidity stands out, reminiscent of apple and citrus, offering a very pleasant and friendly sensation.
