Terroir
The terroir of Penedès is known for its diverse soils and microclimates, ranging from limestone to clay-rich terrains, which enhance the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripening, resulting in wines of great complexity and character.
Winemaking process
The grapes are harvested at their optimal ripeness. Each variety is fermented separately for about 20 days at a low temperature to maximize its aromas. After blending, the wine ages in tanks for six months before being bottled. All tanks are cleaned according to kosher regulations and are sealed and certified with the Kosher seal twice. The entire process, from pressing to bottling, is supervised by a rabbi, and all ingredients used are kosher for Passover.

Pale green in color, bright and very attractive.
Aroma
Aromatically complex, featuring citrus fruits like green apple, floral notes, and white fruit aromas.
Taste
On the palate, it has a very pleasant entry, offering freshness and flavors of white and citrus fruits that are also perceived on the nose. It has good complexity, a well-balanced profile, and a long, lingering finish.

This wine pairs perfectly with grilled fish such as sea bass and gilt-head bream, seafood like prawns and scallops, and white meats such as roast chicken or turkey. It also complements fresh salads, pasta with light herb or lemon sauces, and mild cheeses like goat cheese or ricotta. Additionally, it is an excellent match for vegetarian dishes, including roasted vegetables or vegetable-based rice dishes. All these dishes are prepared in accordance with Kashrut laws.
